- 2 cans (400g each) chickpeas, drained and rinsed
- 1 cup (185g) basmati rice
- Fresh cilantro (optional, for garnish)
- Naan bread (optional, for serving)
Instructions
- Cook the Rice: Rinse 1 cup of basmati rice (185g) under cold water. In a medium saucepan, combine the rice with 2 cups of water. Bring to a boil, reduce the heat, cover, and simmer for 15 minutes, or until the water is absorbed and the rice is tender. Fluff with a fork and set aside.
- Prepare the Butter Chickpeas: In a large pan, pour in the Butter Chicken Sauce. Add the drained chickpeas to the pan.
- Simmer: Stir well and bring the mixture to a gentle simmer over medium heat. Let it simmer for about 10 minutes, allowing the chickpeas to absorb the flavors and the sauce to thicken slightly.
- Serve: Spoon the butter chickpeas over the cooked basmati rice. Garnish with fresh cilantro if desired. Serve with naan bread on the side for an extra treat.
